About Anna Post

Anna Post's food economist and operating since January 2002 postgraduate studies at Gothenburg University. She took his diet b.SC. in 1998 and has since worked in the restaurant industry, and deepened their knowledge of food chemistry, food science and human ecology.
With sustainable development as a starting point, writes Anna an aggregation thesis that discusses the use of ecological and processed foods in Swedish caterers. The food in large households are adjusted to national and global environmental requirements is crucial to how a sustainable food supply to be established. To use organic food is a way to promote sustainable development, but why is it such a vanishingly small proportion of organic foodstuffs are used in large households today? Many caterers today seems to after effects of rationalisation and reduction of appropriations committed on the 1980-1990 's. In addition to large households take into account the requirement for increased use of organic food. In her dissertation Anna hope to find/explain/discuss how the use of organic food to increase rational catering sector we created where the requirement of efficiency govern both catering supply and staffing levels. Empirin has been collected with the help of a nationwide survey which both interviews and questionnaires used.
The first article "Food processing: Barriers to or opportunities for Organic Foods in the Catering Sector?" deals with, inter alia, the question of whether the proportion of organic food can increase by using processing technology. The article will be published in the British Food Journal in 2007. Anna has also authored the report "Processing degree relevant to the use of organically-farmed potatoes and root vegetables in Swedish catering services" together with Kerstin Bergström, Lena Jonsson and Helena Shanahan.
